Crunchy Brussels Sprout Salad with Pecans and Parmessan
Quick and easy salad that is refreshing and a wonderful side dish
- 1 package Sahale Snacks Pecans (Valdosta)
- salt ( to taste)
- 1 clove garlic (minced)
- 1/2 lemon (juice)
- 3 tbsp olive oil
- 1 lb brussels sprouts (ends cut, shredded)
- 1 honeycrisp apple (cored and cut into cubes)
- 2 tbsp parmesan (grated)
- 2 scallions (minced)
- 2 tbsp parsley (minced)
- 1 avaocado (cubed)
- pomegranate seeds (handful)
To make dressing-combine salt, garlic, lemon, olive oil and pepper. Mix well.
Put the Brussels sprouts, apple, Parmesan, avocado, parsley, pomegranate seeds in bowl, Add the pecans and salad dressing. Mix well

I had the Sahale Pecans leftover from New Years so this worked out well and saved me a step.
