Crunchy Brussels Sprout Salad with Pecans and Parmessan

Quick and easy salad that is refreshing and a wonderful side dish

  • 1 package Sahale Snacks Pecans (Valdosta)
  • salt ( to taste)
  • 1 clove garlic (minced)
  • 1/2 lemon (juice)
  • 3 tbsp olive oil
  • 1 lb brussels sprouts (ends cut, shredded)
  • 1 honeycrisp apple (cored and cut into cubes)
  • 2 tbsp parmesan (grated)
  • 2 scallions (minced)
  • 2 tbsp parsley (minced)
  • 1 avaocado (cubed)
  • pomegranate seeds (handful)
  1. To make dressing-combine salt, garlic, lemon, olive oil and pepper.  Mix well.

    Put the Brussels sprouts, apple, Parmesan,  avocado, parsley, pomegranate seeds in bowl,  Add the pecans and salad dressing.  Mix well

I adapted this recipe from the Cozy Kitchen.  

I had the Sahale Pecans leftover from New Years so this worked out well and saved me a step.
