  1. Heat oven to 200F. In a a skillet heat oil over medium heat. Stir in onion, cook 3 minutes. Add garlic, chili powder, cumin, and 1/4 tsp. of the salt, cook another 2 minutes. Stir in beans and broth, bring to a simmer and cook 3 minutes. Smash half the beans with the back of a fork and stir. Place tortillas on a baking sheet and spread 2 Tbsp. of the beans on each tortilla. Place in the oven.
  2. Wipe out skillet, then add 1 Tbsp of the butter. Fry 4 of the eggs 2 minutes, until cooked. Transfer to tortillas in oven. Add remaining 1 Tbsp butter and repeat with remaining 4 eggs.
  3. Remove tortillas from oven, season with remaining 1/4 tsp salt and top each with 1 Tbsp Monterey Jack. Garnish with avocado, salsa, and cilantro, if using. Enjoy!

  1. In a medium skillet put 2 tbsp butter and saute onions for about 2 minutes. Add remaining butter and add cabbage, salt and pepper. Cover and reduce heat cook for about ten minutes. While cabbage cooking bring water to boil and cook noodles according to packet. Once cabbage is tender add drained noodles. Mix well. Serve warm.

Original recipe had 2 oz pancetta that you cook in 2 tbsp butter, the butter amount is the same but divided differently.

  1. Preheat the oven to 425F. Line a large sheet pan with foil, generously spray the foil with non-stick cooking spray. Put the potatoes in the center of the foil, salt and pepper them, to taste. Fold the foil up around the potatoes to create a bowl add in the water, and finish folding the packet to seal it all. Cook for 10 minutes.
  2. In a large bowl add egg, onion, Italian seasoning, tomato paste, panko, 2 Tbsp milk, parsley, and ground beef. Mix everything together until evenly combined. Form the mixture into 6 mini meatloaves. Scoot the potato packet to the left side of the pan. Add the meatloaves to the middle of the hot pan. Spread the ketchup evenly over the loaves. Return the pan to the oven, baking for 23-25 minutes. Take the pan out, and use a paper towel to sop up any grease.
  3. Add the beans to the right side of the pan, in a single layer. Drizzle them with olive oil and season with salt and pepper. Toss gently. Bake again for 18-20 minutes.
  4. Remove the pan from the oven. Open the potato packet, careful to avoid the steam. Transfer them to a bowl. Add the butter and milk, salt and pepper to taste. Mask until smooth. Serve with mini meatloaf, and green beans. Enjoy!

  1. Melt butter in large stockpot. Add chicken, onion and garlic. Saute until onion is tender. Stir in tomato puree and simmer for a couple of minutes. Add tomatoes, carrots, cloves and all the spices and S&P. Cook for a few minutes and then add broth. Let cook until chicken is done. Should thicken up a bit. Add raisins and let plump for about 2 minutes. Serve over rice and top with the toasted almonds.

  1. Bring potatoes to a boil in a large Dutch oven filled with water. Reduce heat to medium; simmer 20 minutes or until tender. Drain; return potatoes to pan. Add chicken stock, salt, and pepper; mash to desired consistently.
  2. Melt butter in a skillet over medium-high. Add leeks; saute 5 minutes. Stir leek mixture into potato mixture (do not wipe out skillet).
  3. Return skillet to medium-high. Add oil and shallots; cook 3 minutes or until shallots are browned and browned and crisp. Spoon mashed potatoes into a serving dish. Top with crispy shallots. Enjoy!
