  1. Mix all dry ingredients together. Add eggs, milk, oil, vanilla and mix well until batter is formed. Pour 1/2c batter into hot waffle maker. Cook until golden brown. I topped mine with fresh berries and whipped cream.

Oven Fried Southern Hot Honey Chicken

I have been hunting for a good oven baked fried chicken and alas I found it. Original recipe found on Half Baked Harvest. This is moist and full of flavor.

  1. Add chicken to gallon bag with zip top and pour in the buttermilk and salt. Toss well and refrigerate for 20 minutes. Preheat oven to 425. Line baking sheet with parchment. Add cornflakes, flour, thyme and salt to flat based medium bowl. Stir well. Remove the chicken from buttermilk mixture and dredge through the cornflake mix. Press gently to coat well. Place on baking sheet. Lightly brush the chicken with olive oil. Cook in oven for 15-20 minutes and then turn the chicken and cook for the remaining 10-15 minutes. In a small pot add the butter, honey, cayenne, chili powder, paprika, garlic powder and salt. Let it melt thoroughly. Once chicken is out drizzle hot honey on it. I let it sit for about 5 minutes and serve.

  1. Preheat the oven to 400F. Place the cauliflower on a baking sheet and drizzle with about 3 Tbsp olive oil, tossing to coat, season with salt and pepper. Roast for about 20 minutes or until the cauliflower is tender and carmelized.
  2. Add the last Tbsp olive oil to a soup pot and once it's warm add the onion, garlic, carrots,thyme and celery. Season with salt and pepper and cook over medium heat until onion is translucent and tender. Cube the butter and add it to the pot, once it melts sprinkle in the flour, stirring to combine, then lower the heat and simmer 2-3 minutes. Pour in the chicken stock and allow to thicken, turning the heat up to medium. Slowly add the milk, combining, lower the heat back down to low, and add the grated cheese and parsley.
  3. Give the roasted cauliflower another rough chop to make bite-size pieces, and then fold into the soup. Season with salt and pepper if desired. Remove thyme stem. Enjoy!

  1. Put chicken in zippered bag and pound gently with a flat side of a mallet until 1/2" thick. Cut each breast into 2 equal pieces. Marinate chicken in the pickle juice for about an hour.
  2. Beat together egg and milk in a bowl. Mix together the flour, sugar and spices in another bowl.
  3. Heat the oil in a skillet to about 350. Dip each chicken piece into the egg, covering both sides, then coat in flour on each side. Fry each chicken piece for 2 minutes on each side, or until golden a cooked through. Place on paper towels to absorb any excess oil. Serve on buns with pickle slices. Enjoy!

  1. To make dough: Combine skim milk, sugar and salt in lg bowl. Dissolve yeast in 1/4 c warm water and let sit for 5 minutes. Should be bubbly. Add in the milk mixture, stir. Add egg substitute and 3 tbsp melted butter and mix well. Add flour to wet mixture until smooth. Turn dough on a lightly floured and knead until smooth and elastic. Takes about 8 minutes. Add 1 tbsp at a time while kneading to get the dough not to be sticky. Place dough in a lg bowl coated with cooking spray. Cover and let rise in warm place for 45 minutes. Punch dough down and turn over in bowl and let rise for another 45 minutes. Punch again and let sit for 5 minutes. Prepare sauce by combining sugar, butter, hot water in a small bowl. Whisk until smooth and place in baking dish. Baking dish should be sprayed with cooking spray. Spread the mixture evenly over the bottom. Prepare filling: Combine 1/2c sugar and cinnamon in a small bowl. Turn dough on smooth surface and roll out to a 16x12 rectangle. Brush dough with melted butter. Sprinkle mixture over dough. Leaving 1/2 border. Begin rolling the dough in a jelly roll fashion. Pinch seams. Cut roll into 15 slices about 1 inch wide each. Place in the baking dish. Lightly coat rolls with cooking spray. Cover and let rise in warm place 30 minutes. Preheat oven to 350. Uncover rolls and bake 20 minutes until browned. Let stand 1 minute after done baking. Invert onto a baking platter. Ready to eat.
