  1. Preheat the oven to 425F. Line a large sheet pan with foil, generously spray the foil with non-stick cooking spray. Put the potatoes in the center of the foil, salt and pepper them, to taste. Fold the foil up around the potatoes to create a bowl add in the water, and finish folding the packet to seal it all. Cook for 10 minutes.
  2. In a large bowl add egg, onion, Italian seasoning, tomato paste, panko, 2 Tbsp milk, parsley, and ground beef. Mix everything together until evenly combined. Form the mixture into 6 mini meatloaves. Scoot the potato packet to the left side of the pan. Add the meatloaves to the middle of the hot pan. Spread the ketchup evenly over the loaves. Return the pan to the oven, baking for 23-25 minutes. Take the pan out, and use a paper towel to sop up any grease.
  3. Add the beans to the right side of the pan, in a single layer. Drizzle them with olive oil and season with salt and pepper. Toss gently. Bake again for 18-20 minutes.
  4. Remove the pan from the oven. Open the potato packet, careful to avoid the steam. Transfer them to a bowl. Add the butter and milk, salt and pepper to taste. Mask until smooth. Serve with mini meatloaf, and green beans. Enjoy!

  1. Wash potatoes, and cut into 4 wedges. Cut out most of the inner part of the potato. Place potatoes in a shallow microwave safe dish and microwave uncovered 10 minutes, or until tender.
  2. Remove potatoes and brush both sides with olive oil, and place on baking sheet. Sprinkle with salt and pepper, top with cheese, bacon, and scallions. Broil in the oven approximately 5 minutes or until cheese is melted. Serve with ranch if desired. Enjoy!

Mini Potato Gratin Stacks

Mini Potato Gratin Stacks
Individual potato gratin stacks made easy by using a muffin pan.

  1. Preheat oven to 350F. Spray a 12 muffin tin with oil.
  2. Peel potatoes, trim potatoes so they will fit into muffin tin, then slice into 1/10" thick slices. Place butter, garlic, cream, salt, pepper, and thyme in a microwave proof bowl, then melt in 30 second bursts. Stir, then set aside.
  3. Place potato slices in the muffin pans o they go halfway up the tin. Try to match by size to make them into neat stacks. Drizzle each stack with 1/2 tsp. of cream mixture. Sprinkle half of the cheese over the stacks. Top with the remaining potato slices. Drizzle with remaining cream sauce. Cover loosely with foil and bake for 35 minutes.
  4. Remove from oven, sprinkle with remaining cheese and bake without foil for 10 minutes or until golden and the potato is soft. Let stand for 5 minutes before removing. Use a tablespoon or butter knife to help scoop them out.

Baked Potato Board
I saw this and thought, I have to try this. I think you could add all sorts of items to the board which I plan to expand. Would be good with chili, variety of cheeses, steamed broccoli.

  1. Preheat oven to 375. Cut slices on the top of the potato. Rub down with the olive oil and place on baking sheet. Cook for 30 minutes, should be tender when inserting a knife. Cook until done. For the board you can decorate it with the side items butter through sour cream how you see fit. To serve cut potato in half, I mash it a bit with a fork to make it fluffy. Put your toppings on top and ready to eat.
