  1. Remove the beef from the fridge and set out at room temp while you make the sauce. Place the orange juice, soy sauce, sesame oil, brown sugar, cornstarch, garlic, 1/2 tsp salt, and red pepper flakes in a small bowl and whisk to combine. Set aside.
  2. Heat 1/2 Tbsp. oil in a large frying pan over high heat until shimmering. Add the beef and season with the remaining 1/2 tsp. salt and pepper. Press the meat into an even layer and cook undisturbed until the bottom is brown and crisped, about 4 minutes. Break up the meat with a wooden spoon, then press it into the pan to help it brown. Cook until well-browned and crisp all around, 3-4 minutes. Transfer to a large paper towel lined plate.
  3. Drizzle the remaining olive oil around the pan. Add the orange zest, onion, and red pepper, and cook, stirring until slightly tender, about 3 minutes. Rewhisk the sauce, pour into the pan, and stir to coat the vegetables. Bring to a boil and cook until thickened, about 1 minute. Return the beef to the pan and stir to combine. Serve over rice and top with scallions. Enjoy!

  1. Wash potatoes, and cut into 4 wedges. Cut out most of the inner part of the potato. Place potatoes in a shallow microwave safe dish and microwave uncovered 10 minutes, or until tender.
  2. Remove potatoes and brush both sides with olive oil, and place on baking sheet. Sprinkle with salt and pepper, top with cheese, bacon, and scallions. Broil in the oven approximately 5 minutes or until cheese is melted. Serve with ranch if desired. Enjoy!

Roasted Cauliflower Stir-Fry

Roasted Cauliflower Stir-Fry
Great stir-fry recipe without the meat.

  1. Arrange a rack in the middle of the oven and preheat to 450F. Place cauliflower on baking sheet, drizzle with 2 Tbsp. of the oil and season with salt and pepper. Spread into an even layer and roast until crisp and golden, stirring halfway through about 20-25 minutes.
  2. Heat the remaining 2 Tbsp oil in a wok over medium-high heat until shimmering. Add the ginger and stir until caramelized, 1-2 minutes. Add the onion and garlic, and cook for 2 minutes more, making sure they don't burn.
  3. Turn up the heat to high, then add the roasted cauliflower and scallions. Stir-fry for 30 seconds. Add the rice wine, soy sauce, sesame oil, red pepper flakes, and sugar. Stir-fry for about 1 minute, then serve with rice if desired. Enjoy!

  1. In a medium bowl combine mustard, lemon juice, honey, vegetable oil, olive oil, and salt and pepper to taste. Add the carrots, parsley, and scallions and toss well. Taste and adjust seasonings. Cover and refrigerate until ready to serve. Enjoy!

  1. Preheat oven to 350F.
  2. Spray two cooking sheets with cooking spray. Divide pizza dough and shape into approximately 8x12 oblong shape. Place on prepared cooking sheets, brush the dough with olive oil. Precook crust for about 5 minutes.
  3. Using a grill pan, brush the pan with olive oil. Working in batches grill the pineapple, scallions, and ham, turning as needed, until lightly charred. Transfer to a plate as each batch is done. Cut the ham slices in half if desired.
  4. Top precooked crusts evenly with cheeses, ham, scallion, and pineapple. Place in oven for about 5-6 more minutes or until crust is cooked through and cheese melts. Slice and enjoy!
