Stir-Fried Pork with Leeks
Simple stir fry using pork and leeks. Serve with rice.

  1. In a medium bowl, combine the pork, sesame oil, soy sauce, cornstarch, sugar, and half the garlic; let sit for 15 minutes.
  2. Heat a wok, or a skillet, over high heat. Add the 1 Tbsp. oil and coat the pan. Add the leeks and cook, stirring and tossing constantly, until fragrant, about 1 minute. Transfer leeks to a plate and set aside.
  3. Return wok to heat and add remaining oil. Add the pork mixture and remaining garlic and cook, stirring and tossing constantly, until the pork is browned, about 2 minutes.
  4. Add the reserved leeks to the wok and cook, stirring and tossing often, until just tender, about 1 minute. Serve with rice. Enjoy!

Roasted Cauliflower Stir-Fry
Great stir-fry recipe without the meat.

  1. Arrange a rack in the middle of the oven and preheat to 450F. Place cauliflower on baking sheet, drizzle with 2 Tbsp. of the oil and season with salt and pepper. Spread into an even layer and roast until crisp and golden, stirring halfway through about 20-25 minutes.
  2. Heat the remaining 2 Tbsp oil in a wok over medium-high heat until shimmering. Add the ginger and stir until caramelized, 1-2 minutes. Add the onion and garlic, and cook for 2 minutes more, making sure they don't burn.
  3. Turn up the heat to high, then add the roasted cauliflower and scallions. Stir-fry for 30 seconds. Add the rice wine, soy sauce, sesame oil, red pepper flakes, and sugar. Stir-fry for about 1 minute, then serve with rice if desired. Enjoy!

Chicken Fried Rice
Easy to make and mix up with whatever meat you have if you don't have chicken, also use whatever veggies you like. Make the rice a day ahead.

  1. In wok heat 1-2 Tbsp. on high heat until hot. Add the garlic, ginger, and onion and saute 2-3 minutes or until fragrant. Add the vegetables and cook for another 1-2 minutes or until tender. Transfer to a plate.
  2. Add 1-2 Tbsp more oil to wok. Pour in the beaten eggs. Scramble into small pieces until cooked. Add cooked meat and saute for another minute.
  3. Stir in the rice and break up any large pieces while tossing until heated through about 2 minutes.
  4. Drizzle in soy sauce, fish sauce, mirin, and sesame oil, tossing to combine everything evenly. Keep stirring the fried rice until slightly toasted, about 2 minutes. Add the vegetables back in and toss to combine. Salt and pepper to taste.
  5. Top with green onion and cashews. Enjoy!

Preheat oven to 4000

Mix the brussel sprouts, olive oil with salt and pepper.Ā  Ā Place on a pan and cook in oven for about 25 minutes.Ā  Take out when done.

MeanwhileĀ  slice the mushrooms.Ā  Ā Begin to cook on med heat in a pan on stove.Ā  Ā When they begin to get semi limp add the roasted brussel sprouts and continue to cook.

Combine the soy sauce, honey, rice vinegar and sesame oil with the chili garlic sauce.Ā  Mix well.Ā  When the mushrooms and brussel sprouts cooked through add sauce.Ā  Cook for an additional 5 minutes until well coated.Ā  Serve on rice.

 

*On the brussel sprouts I prefer to not cut off the bottom stem and halve but your choice.
