Ingredients
- 1 lb carrots peeled and grated
- 2 tsp dijon mustard
- 1 Tbsp fresh lemon juice
- 1 1/2 Tbsp vegetable oil
- 1 1/2 Tbsp olive oil
- 2 tsp honey
- 2 Tbsp parsley chopped
- 2 scallions finely dliced

Instructions
- In a medium bowl combine mustard, lemon juice, honey, vegetable oil, olive oil, and salt and pepper to taste. Add the carrots, parsley, and scallions and toss well. Taste and adjust seasonings. Cover and refrigerate until ready to serve. Enjoy!
