Ranch Chicken

This is a moist and delicious chicken dish that I would make again and again.

  • 4 Chicken Breast (Boneless)
  • Olive Oil Spray
  • 1 ounce Ranch Dressing Seasoning Mix
  • 1 cup Corn Flakes (Crushed)
  • 1/2 cup Parmesan Cheese (Grated)
  1. Preheat oven to 375F.  Spray 9×13 glass baking dish with cooking spray.

    Combine Ranch Seasoning, Cornflakes and Parmesan in large freezer bag.

    Shake well and mix together.

    Spray Chicken breast and then drop in baggie.  Coat fully and then place in baking dish.   Repeat until all four chicken breasts are coated.

    Sprinkle remainder on tops of chicken.

    Bake chicken for 40-45 minutes.

     

The original recipe is  from Life in the Lofthouse.   I used cooking spray in lieu of the butter from the original recipe.

I ended up using my wood roller to smash the cornflakes but would advise maybe pulsing it in your food processor, less messy.

I served this with mashed potatoes but would be great with a side casserole or salad as well.

Easy Baked Manicotti

 

Easy Baked Manicotti

Quick to prepare manicotti that the whole family will enjoy.

  • 2 cups spaghetti sauce (divided)
  • 1 egg (lightly beaten)
  • 1 3/4 cups ricotta cheese
  • 1 1/2 cups mozarrella (shredded)
  • 1/2 cup parmesan (shredded)
  • 1/4 cup pesto
  • 12 manicotti shells (cooked, rinsed in cold water)
  1. Preheat oven to 350F.  Spread 3/4 cup of the spaghetti sauce on the bottom of 13×9-inch baking dish.  Mix egg, cheese and pesto until well blended.  Spoon cheese mixture into large resealable plastic bag.  Using scissors, cut off small hole from one of the bottom corners of the bag.

  2. Fill manicotti shells, one at a time, squeezing cheese mixture into both sides of each shell.  Place manicotti over sauce in baking dish; pour remaining  1 3/4cups spaghetti sauce over manicotti.  Cover with foil.

  3. Bake 40 min. or until heated through.

Use your own spaghetti sauce or favorite jar sauce.

Brown Sugar Meatloaf

Brown Sugar Meatloaf

Meatloaf with a deliciously sweet sauce.

  • 1/2 cup brown sugar (loosely packed)
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 1/2 lbs ground beef
  • 1/2 cup milk
  • 2 eggs
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 onion, small (chopped)
  • 1/4 tsp ground ginger
  • 3/4 cup saltine crackers (finely crushed)
  1. Preheat oven to 350F

  2. Mix together brown sugar, ketchup and Worcestershire sauce in small saucepan.

  3. In a mixing bowl combine remaining ingredients through crackers.

  4. Shape into a loaf and place onto a 9″x9″ pan.  This allows the fat to drain away from the pan.

  5. Spread enough of the ketchup mixture on the top to generously cover the meatloaf.  Allowing it to drop down the sides.

  6. Bake in preheated oven for 1 hour or until juices run clear.
